I made a quick stop at the grocery after work today, mostly for TP, but also picked up a few fresh items. One of the trickiest things about living in a metropolis is the distance you have from fresh food. If you are a big vegetable and fruit eater, like Mr. PT and I, you find yourself in the produce section at least twice a week. So, if I have to make a pit stop for something silly but necessary (like TP), I always grab a few fruits and veggies for storage. Today, I got fresh green lettuce, 2 avocados, grapes, and a pack of mushrooms. I didn't need any of these items for dinner tonight, but I know I will use them later this week.
So tonight, I resurfaced the hummus with some freshly drizzled olive oil and served it with toasted ciabatta, carrots, tomatoes, and cheese. I mixed the table up with some steamed edamame (loaded with FIBER!) and grapes. It was quite delicious!
We still have extras for lunch tomorrow! No complaints here. Overall, a very satisfying dinner. We finished dinner with a handful of chocolate covered raisins saved from a movie night over the weekend.
It was a day to celebrate the glories of leftovers.

Holy balls, I can't believe that was ALL YOU ATE FOR DINNER. That would never in a million years fill Noah up, even if he wasn't sharing with me. Any ideas for hearty, healthy meals you can share in this shiny new blog of yours Mrs. PT?? ;)
You would be surprised how quickly the protein and fiber fills you up! But yes, heartier meals are on the way! :)
